Ingredients
5 servings
2 lbchuck beef mince
80% lean

2 rasherssmoky bacon
minced, optional

0.5brown onion
finely chopped

1 handfulparsley leaves
chopped, Also for sauce

½ cupbreadcrumbs

milk

1egg
large

1 tspdried oregano

1 Tbspworcestershire sauce

1 tspdijon mustard

2 Tbspolive oil

finely chopped

2garlic clove

24 ozbutton mushrooms
sliced

2 Tbsptomato paste

⅔ tspthyme

2 Tbspbutter

4 Tbspplain flour

6 cupsbeef stock

2 Tbspworcestershire sauce
Instructions
Step 1
In a large mixing bowl add
-breadcrumbs
-milk
-egg
Give it a beat using a fork.
-Next, add/combine
-ground beef
-bacon
-chopped onion
-parsley
-oregano
-mustard
-Worcestershire sauce
Season well with salt and pepper and mix well using your hands, but don’t over work it.
Step 2
Divide the mix into six even portions, and shape these into flat oval shaped patties. Place on parchment paper, cover and refrigerate until ready to cook.
Step 3
For the sauce, in a large frying pan
-melt two tablespoons of butter
-add the chopped onion
-garlic
-thyme
-and cook for a couple minutes until onion starts to soften
-add the tomato paste, cook 30 seconds
-add the sliced mushrooms, and cook, until the mushrooms have some color
-Add the flour and mix well for a minute
-Add a little beef stock as you continuously stir to avoid lumps
-add remaining stock
-along with Worcestershire sauce and
-bring to the boil
-Reduce heat and simmer for a few minutes until thickened
-Taste for seasoning, and transfer content to a container, set aside.
Step 4
-Cook patties over medium heat, 4 to 5 minutes on each side.
-add patties to the sauce, and bring to a slow simmer.
-Remove patties and place on warm serving plates.
-Finish sauce by stirring in two tablespoon of butter and
-the other half of chopped parsley.
-Mix well over low heat.
