Instructions

Step 1
Ok, chop up potatoes. For a single batch maybe four good size potatoes. Put in pot with just enough water to cover potatoes. Dump in the clams with the clam juice. Cook gently until potatoes are cooked. Put in crock pot
Step 2
Meanwhile put 3 meaty slices of salt pork in a skillet and cook with about a stick of butter. Low heat so you do not brown the butter. Add cut up celery and then cut up onions. I think about one medium to large onion and 3 celery stalks? When the salt pork is cooked remove and cut up little pieces of the meaty part and add to the crock pot. When celery and onions are almost soft put those in the crock pot.
Step 3
Add half and half and seasoning. I used to us a lawrys seafood seasoning but I can find it anymore. I would just look for something that has lemon and other spices.
Step 4
Every measurement of the ingredients are to your own preference. You are going to have to judge for yourself. When I have the brothy part done, sometimes I decide I need more potatoes and cook a few more.
Step 5
Also, if you are in a hurry, you can use a stove top pot and not a crock pot, but you should watch over it carefully. You want it to cook down a little to steam out some of the water leaving the flavor.
