Citrus Salmon with Minty Bean Salad

Instructions

Step 1
Melt half of the oil in a non-stick frying pan. Add the salmon skin-side down, season with salt and pepper and squeeze over a little lemon juice.
Step 2
Fry for 3-4 minutes, then turn the salmon over and fry for a further 1-2 minutes, or until cooked through. Squeeze over a little more lemon juice and season to taste. Remove from the pan and set aside.
Step 3
Meanwhile, cook the beans in boiling salted water for 5-6 minutes, until just tender, then drain.
Step 4
Melt the remaining oil in a small frying pan, add the garlic and stir-fry quickly until crisp and lightly golden. Remove from the heat and add the tomato.
Step 5
Whisk together the balsamic and mint, and season well. Pour over the beans and mix well.
Step 6
Tip into a serving bowl and scatter over the tomato and garlic mixture. Place the salmon on top and serve with extra lemon wedges.
