Step 1
In a large pot melt 3 tbs butter over medium heat. Add chopped onion and sauté, stirring occasionally, until translucent. Add thyme and stir. Add mushrooms and gently fold, until mushrooms start to reduce. Add sherry. Stir occasionally, until the mushrooms have reduced in half. Stir in 3 cups of the broth, bring to a gentle boil, reduce to a simmer.
Step 2
In the meantime, make the bechamel. Melt 1/4 cup of butter in a small pot over medium heat. Whisk in flour, then immediately whisk in the cream. Make sure mixture is smooth, then add 1 cup of broth, salt and pepper. Whisk well and constantly, until mixture starts to thicken. Remove from heat.
Step 3
Pour bechamel into the mushroom mixture. Stir until well blended. Increase heat and bring to gentle boil, stirring to prevent scorching on the bottom. Reduce heat and simmer about 15 minutes.
Step 4
Serve hot, with a crusty bread, or buttery biscuits
