Instructions
Step 1
Prepare Ingredients: Preheat a tagine or heavy-bottomed pot over medium-high heat. Season chicken thighs with salt, pepper, and a sprinkle of the spices.

Step 2
Brown the Chicken: Add olive oil to the pot. Brown the chicken thighs on both sides, then remove and set aside.
Step 3
Sauté Aromatics: In the same pot, add the onion and garlic. Sauté until softened. Add the carrots, bell pepper, and zucchini, cooking until slightly tender.
Step 4
Cook Chicken: Return the chicken to the pot. Add the diced tomatoes and chicken broth. Bring to a simmer, cover, and cook for 15-20 minutes.

Add Lentils: Add the rinsed lentils to the pot. Continue to simmer, covered, for an additional 15-25 minutes, or until the lentils are tender and the chicken is cooked through.

Check and Adjust: In the last 10 minutes of cooking, add dried apricots or raisins if using. Check for seasoning, adding more salt or spices if needed.
