Instructions

Dough- Day 1

Step 1
Mix together flour, butter, and granulated sugar in the table mixer. Dissolve the yeast in warm water. Whisk 1.45 egg yolk in a small bowl.

Add the yeast, egg yolk, and whipping cream to the table mixer. Mix together until it is knead in a ball.

Put into refrigerator for 30 minutes up to an hour, or until the dough is firmed up

Roll the dough into .4 oz (1 inch) balls and place on a sheet tray lined with parchment paper and cover them with a bag.

Filling

Grind the walnuts if you did not do it the day before. Separate the egg yolk and egg whites. Preheat oven to 350 degrees.

Put the egg whites in the table mixer until reach soft peaks then you add the granulated sugar and pure almond extract.

Roll the dough up start on the long end and then bend into a crescent moon shape and pinch the ends
