Ginger garlic chicken and rice

Instructions
Step 1
Salt and pepper the chicken and fry in a deep frying pan
Step 2
Remove and add 1-2 finely chopped shallots, 2 minced garlic and 1-2 tsp minced ginger
Step 3
After frying for 1-2min, add rice, dry to the pan and fry for 1-2min
Step 4
Then add 2 cups of chicken stock and add the chicken back into pan
Step 5
Cook on low to medium head with lid for 20-25min
Step 6
In meantime, add 2 minced garlic, 1tsp minced ginger, 1tsp salt and 1tsp sugar. In same bowl but on the side, add chopped spring onions.
Step 7
Heat neutral oil in a saucepan
Step 8
Pour over garlic and ginger in bowl avoiding spring onions
Step 9
After 1min stir and have as a topping to meal
