One Pot Chicken & Veggie Rice with Raisins and Currants

If you’re a Rice lover like me, than this one is for you! It’s filled with flavour that bursts in your mouth with each bite! 🤤🤤 I can almost guarantee it’s going to be the BEST rice you’ll try! 🙌🏻😍
This Rice consists of tender Chicken, mixed Veggies and let’s not forget the Raisins & Currants that take it to another level of deliciousness!
You can serve it with some salad, however i recommend serving it with some crispy Lebanese Bread, Garlic Yogurt and Nuts. Try it this way and thank me later 😘

Ingredients
8 servings

⅓ cupcanola oil

1onion
large, finely chopped

3garlic cloves
crushed

1 tspGinger
Crushed

1Tomato
Large, Peeled & Finely Chopped

500gchicken tenderloins

2 tspsalt

1 tspblack pepper

1 tspgarlic powder

1 tsponion powder

1 tspturmeric

1 tspkabsa seasoning mix

½ tspcinnamon

500gMix Veggies
Peas Corn & Carrot

2 Tbstomato paste

3 cupsbasmati rice

1lchicken stock

2 cupswater

1 cupraisins

1 cupcurrants

1 tspturmeric

½ tspkabsa spice

1 tspVegeta

1 tspSalt
or to taste if chicken stock is not salt reduced
Instructions
Step 1
Wash the Rice until the water is clear. Cover with water and soak for minimum 10 minutes.

Step 2
Cook the Onion, Garlic, Ginger and Tomatoes in Canola Oil over high heat for 8-10 minutes.





Step 3
Add the Chicken Tenderloins (sliced into cubes) and cook for a couple of minutes.

Step 4
Add the seasonings.







Step 5
Add the mixed Veggies and cook for 2 minutes.

Step 6
Add the Tomato Paste and give them a good mix.

Step 7
Strain the Rice and add it in.

Step 8
Add the Chicken Stock and Water and bring to a light simmer.


Step 9
Add the Raisins, Currants and Seasonings and give them a good mix.






Step 10
Lower the heat, cover and cook for 18 minutes or until the Rice is cooked.
