Instructions
Step 1
Heat oven to 220C/fan 200C/gas 7. Cut a slit along the side of each chicken breast, then use your knife to open it out into a pocket.



Step 2
Slice the mozzarella ball. Spread the pesto on both sides of the slit and place 3-4 slices of mozzarella in the opening , then press to close. Wrap in foil. Lift onto a baking tray or oven proof dish. Season the top of the chicken with smoked paprika, salt, and pepper. Drizzle with olive oil.







Step 3
Roast for 20 mins until the chicken is golden around the edges


Step 4
Season and roast the potatoes and other veg with the chorizo, tomatoes, and smoked paprika
