Instructions

Step 1
Put the flour on a clean surface or in a large, shallow bottle. Form the flour into a mountain, and then form a well in the middle, like a crater in a volcano.
Step 2
Pour the eggs into the middle of the well. Use a large fork or your hands to mix the egg into the flour.
Step 3
Knead well to incorporate all the egg in the flour. If the mixture is too dry to come together, add cold water, a tablespoon at a time.
Step 4
Once the dough is homogeneous and smooth, wrap it with plastic wrap or seal it in a Ziploc bag and let rest for 30 minutes at room temperature.
Step 5
Roll or form noodles as desired. Cook in boiling water, 2-4 minutes until all dente.
