Ingredients

* Shrimp Marinade:

⅓ cupExtra virgin olive oil

2 tablespoonhoney

2 tablespoonswhite vinegar

2 tablespoonspomegranate molasses

1 tablespoonBrandy

2zest of lemons

2lemon
juiced

4garlic cloves
minced

2 tablespoonsfresh thyme

2 tablespoonginger
grated

4 sprigsgreen onions

1 ½ tablespoonallspice

1 teaspoonnutmeg

1 teaspoonblack pepper

1 teaspoonpaprika

½ teaspooncoriander

½ teaspoonred pepper flakes
Instructions
Step 1
Place all the marinade ingredients in a food processor and puree until well combined.
Step 2
In a large bowl, mix the shrimp with 1 cup of the marinade mixture and toss well to coat, then cover with plastic wrap and marinate at room temperature for 30 minutes.
Step 3
Preheat grill to medium-high. Place shrimp, pineapple, bell pepper and red onion on previously soaked skewers, grill uncovered for 3 minutes until charred, then turn and grill for 2-3 minutes, or until shrimp are opaque and coiled.
Step 4
Serve the shrimp with additional lime wedges and cilantro if desired.
Note:
Step 5
* 1 cup of Shrimp Marinade, (It can be prepared in advance and stored in a jar in the refrigerator for a week).
