These potatoes are crispy full of flavor and look so pretty on the plate . I like a bit of spice on mine but adjust the spice level according to your own tastes and enjoy

Step 1
Peel the potatoes then cut into uniform square shapes . This part is optional and only if you want them to look symmetrical . Otherwise you can just cut in half and proceed to the next step

Step 2
Place the potato squares flat and put a chopstick at each side . This is to prevent cutting through the whole potatoes when you are thinly slicing both sides . For the first side do thin slices vertically all the way across then flip it and do thin slices diagonally all the way across . This should result in a bendy accordion shaped potato . For a tip if your potato is not very thick you can use skewers to line next to the potato and do smaller cuts
Step 3
Put the potatoes into ice cold water for 15 minutes then get a small roasting tray and add a splash of olive oil in with two cloves of garlic bashed and two sprigs of rosemary . Put Into a preheated oven at 200 c / 400 f for ten minutes to heat the oil up

Step 4
Pat the potatoes dry then remove the tray from the oven and take out the garlic and rosemary . Add in the potatoes and brush them in the oil then place in the oven for 20 minutes
Step 5
Melt butter in a pan with two cloves of minced garlic salt pepper paprika cumin chopped dill and red pepper flakes . Remove the pan from the oven flip the potatoes and brush this all over then bake a further 15 minutes or until golden and crispy . Enjoy
