Preheat oven to 220° C

Sift flour into bowl, make well, add eggs, slowly incorporate

When batter becomes too stiff to whsk, add milk a little at a time, whisking until fully incorporated

Add salt

Cover, and leave 1hr to rest

Season beef, allow to rest

When batter and meatt have been resting for 50 mins, add oiled pan to hot oven to heat
Step 8
Once batter has rested for 60 mins, pour half into the hot oil in the pan, trying to cover base of pan
Step 9
Working quickly, scatter the seasoned meat into the batter
Step 10
Pour the remaining batter over the meat
Step 11
Cook for 30 mins, DO NOT open the oven until done
