Instructions

Step 1
In a large bowl combine the rice flour, salt and baking powder. Set aside
Step 2
In a smaller bowl place the butter (at room temperature) and with a fork or a whisk introduce the sugar while mixing until creamy. Add the three eggs to the butter and mix well once again (it doesn't have to be perfectly mixed)
Step 3
Add the wet to the dry and mix well. Once thick and fully incorporated, add the coconut milk and cows milk and keep mixing. Line an oven dish with banana leaves and pour in the mixture.
Step 4
Bake at 180 C for 15 minutes. While you wait, open and chop the salted duck egg, and once the 15 minutes are up sprinkle it over the still undercooked batter. Do the same with the cheese. Bake for another 20 minutes and once out sprinkle some coconut over the top.
