Polish Gingerbread Cake

Piernik Staropolski (Old-Polish Gingerbread Cake, pronon. ‘Pierre-nick’) is a classic dessert based on honey. Three layers of spicy, fragrant cake are interspersed with two layers of filling: damson plum jam and slightly boozy walnut cream.

Instructions

Step 1
Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.

In a mixing bowl, combine the flour, baking soda, spices (cinnamon, ginger, cloves, nutmeg), and salt. Set this dry mixture aside.

In another bowl, cream together the softened butter and sugar until it's light and fluffy.

Beat in the molasses and eggs until well combined.
Step 5
Gradually add the dry mixture into the wet ingredients, mixing until smooth.
Step 6
Finally, stir in the hot water until the batter is well blended. It will be thin; don't worry, that's how it should be.
Step 7
Pour the batter into the greased baking pan.
Step 8
Bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 9
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Step 10
Once it's completely cool, you can dust it with powdered sugar or even make a simple glaze with powdered sugar and a little water or lemon juice.
