Instructions

Step 1
Start by preheating your oven to 425 degrees.
Step 2
Chop up your red bell pepper, carrots, onion, brussels sprouts (if not using a pre-shaved bag), and sweet potato. Then add them to a baking sheet and spray with an even coat of avocado oil. Season evenly with salt, pepper, and garlic powder.
Step 3
Place in the oven for about 25-30 minutes, or until everything is soft and has a nice crisp.
Step 4
Meanwhile, cut the chicken breast into bite-size chunks, then season with salt, pepper, and oregano. In a large pan over medium-high heat, add a spray of avocado oil. Once hot, add the chicken and cook for about 5-7 minutes, stirring occasionally, until fully cooked. Remove the pan from the heat when the chicken is cooked, and wait for the veggies to come out of the oven.
Step 5
To make the glaze, mix together 2 tablespoons of apple cider vinegar, 1 tablespoon of olive oil, 2 tablespoons of balsamic glaze, 1 tablespoon of tahini, 1 tablespoon of honey, and a pinch of salt. Then set it aside.
Step 6
Once the veggies are cooked, add them to the pan with the chicken over medium heat. Pour the glaze over the chicken and veggies and mix until well incorporated. Let it simmer for 1-2 minutes while the sauce reduces.
