Instructions
Step 1
Drizzle oil in a hot pot.
Cook sausage, breaking up into pieces, until cooked through, 3-4 minutes.
Step 2
In a bowl, mix cornstarch and 1 tbsp water until smooth and no lumps remain.
Step 3
Stir stock concentrate, cornstarch mixture, half the italian herb paste (or to taste), and 2 cups water into pot with cooked sausage.
Step 4
Cover pot and bring to a boil. Stir in heavy cream, tortellini, and spinach.
Cook, uncovered, stirring occasionally, until slightly thickened, tortellini are tender, and sausage is cooked, 3-4 minutes.
Taste and season with salt as desired.
Step 5
While soup cooks, trim green beans and chop green parts (you can use whites for something else).
Use green parts as garnish.
