Crumbed Salmon With Sweet Potato Chips

Instructions
Step 1
Preheat oven to 200°C (400°F). Place the sweet potato on a baking tray, drizzle with 1 tablespoon oil and sprinkle with salt and pepper. Roast for 30–35 minutes or until golden.
Step 2
While the sweet potato is cooking, place the bread, parsley, lemon zest, chilli flakes,, salt and pepper in a food processor and whiz to combine. Stir through the other tablespoon of olive oil
Step 3
Place the salmon on a baking tray lined with non-stick baking paper, top with the breadcrumb mixture and bake for 12–15 minutes or until golden and cooked to your liking.
Step 4
Serve with the sweet potato chips and steamed green veg or a big green salad
