Step 1
Soak lecithin granules in water for 15-20 mins before mixing the pastry.
Whisk or sift dry ingredients together in a bowl. Cream butter and sugar. Add lecithin in water, flax and vanilla and beat well to continue creaming.
Add dry ingredients and mix. You may need to turn the partly mixed dough out on to a bench and continue mixing it together by hand until you have a smooth ball of dough. Wrap in glad wrap and refrigerate for at least 4 hours or a few days ( whenever you are ready to use it). Remove from fridge and allow dough to return to room temperature .
Knead dough back into a smooth ball- it will be crumbly after it’s been refrigerated. Rollout on lightly floured surface or between 2 sheets baking paper.
