Ingredients
4 servings
1 lbitalian sausage
1 ½ cupsLong Grain Rice
¼ cupworcestershire sauce
3 cupslow sodium chicken stock
1green bell pepper
small, diced
1red bell pepper
small, diced
1sweet onion
medium, diced
1rib celery
diced
4cloves garlic
minced
salt
to taste
pepper
to taste
2 TbspCreole seasoning
or Creole Kick seasoning, cajun seasoning
2bay leaves
¼ cupparsley
chopped, or cilantro
Instructions
Step 1
Dice the onion, green bell pepper, red pepper and the celery. Set aside in a bowl.
Step 2
Set stovetop to medium/high heat. Drizzle a small amount of olive oil in the pan and brown sausage on both sides. Don't flip or move until crust forms. Once sausage has browned on both sides, crumble it up with a spatula.
Step 3
Add Worcestershire sauce to deglaze pan. Get all the deliciousness off the bottom of the pan.
Step 4
Add the veggies in and sauté until slightly softened and translucent. Add garlic and stir for about 1 minute. Don't burn the garlic! Add a pinch of salt and pepper
Step 5
Add the 1.5 cups of long grain rice to the pan and stir to brown the rice over med/high heat for 2-3 minutes
Step 6
Add 3 cups of chicken broth, creole seasoning, 2 bay leaves, and stir. Bring to a boil and lower heat to a high simmer. Cover pan and set a timer for 25 minutes
Step 7
Uncover and fluff with a fork. It will be a bit wet. Leave on stove uncovered on low simmer for 5-10 minutes. Stirring occasionaly.
Step 8
Garnish with parsley or cilantro. Enjoy!
