Instructions

Step 1
Bring a pot of water to a boil and add a pinch of salt. peel or wash the potatoes depending on your preference (possibly cut them in half). add the potatoes to the pot for about 15-30 minutes or until they are soft. You can test if they are cooked by piercing the skin with a fork.
Step 2
Rinse the broccoli and cut it into smaller florets and the stem into thin pieces depending on your liking. when the potatoes have about three minutes left to cook add the broccoli and boil for approximately 3 minutes or until it is tender.
Step 3
In the meantime, fry the salmon for a few minutes on each side, with the oil in a pan on a medium to high heat until it is golden cook, until the center of the fish is opaque and flakes apart easily.
Step 4
Rinse the tomatoes and slice them.
Step 5
Plate all the ingredients and serve warm.
