Mozzarella tomato pesto chicken over pasta

All the yummy flavors come together in this easy chicken dinner! If you don’t like tomatoes, you can omit them and add extra pesto, if you’d like.

Instructions
Step 1
Season chicken on both sides. Add the 1 tbsp oil to a pan over medium heat. Add the chicken to the pan. Cook 5-7 minutes then flip.
Step 2
Meanwhile cook the pasta in salted water to al dente.
Step 3
Add the tomatoes to the pan with the chicken and season with salt and pepper. Cook the chicken an additional 5-7 minutes until cooked to 165°F. Remove chicken to a plate.
Step 4
Deglaze your pan with the wine or stock and scrape up the boys from the bottom. Smash the tomatoes and mix in the butter. Season again to taste with salt and pepper.
Step 5
Drain the pasta and toss with the remaining oil (season if desired)
Step 6
Add pasta to a plate, top with the tomatoes.
Step 7
Return chicken to the pan, add the mozzarella on top, cover and cook until cheese is melted.
Step 8
Add chicken on top of the tomatoes, then top with the pesto and fresh parsley.
