Instructions
Step 1
Preheat your oven to 225°F (105°C). Line baking sheets with parchment paper.

In a large bowl, beat egg whites until frothy. Add cream of tartar and beat until soft peaks form.

Gradually add sugar, continuing to beat until stiff peaks form.

Beat in peppermint extract.
Step 5
Use a toothpick to add red food coloring and gently swirl it through the meringue for a marbled effect.
Step 6
Spoon or pipe the meringue onto the prepared sheets.
Step 7
Bake for 1.5 to 2 hours, or until meringues are dry and crisp but not browned.
Step 8
Turn off the oven and leave the meringues inside to cool completely.
Step 9
Garnish with crushed peppermint candies.
