Step 1
Place the potato in a small saucepan and cover with cold water by 2 inches. Bring to a boil and cook until tender, about 20 minutes; drain and let cool about 10 minutes.

Preheat the oven to 400°F. Spray an 8 1/2 x 4 1/2-inch loaf pan with nonstick spray.
Step 3
Peel the potato and shred it on the large holes of a box grater into a large bowl. Add the turkey, onion, parsley, egg white, mustard, oregano, Worcestershire sauce, salt, and 1/4 cup ketchup.
Step 4
Bake until an instant-read thermometer inserted into the center of the meatloaf registers 165°F, 50-55 minutes. Remove from the oven and let stand about 15 minutes. Cut into 6 slices.
