Smokey sun-dried tomato pasta is a decadent quick meal that has mac and cheese vibes with an intense umami flavor. This no-bake recipe comes together quickly because the different elements of the dish are cooked and prepped at the same time.

Instructions
Step 1
Cook noodles until al dente in salted water. Then drain and return to pot.
Step 2
In a medium skillet heat olive oil and cook tofu bacon for 2-4 minutes or until crispy.
Step 3
To the skillet add the onion, garlic, and thyme and cook for 5 minutes until onion is soft. Season with salt and pepper and set aside.
Step 4
In a blender add the coconut milk, sun-dried tomatoes and the oil, miso, nutritional yeast, and onion powder and blend until smooth.
Step 5
Add the sauce to the noodles and heat through. Taste for additional seasoning.
Step 6
Serve topped with bacon onion mixture.
