Hidden Veggies Mac n' Cheese

Instructions

Sauce

Step 1
Put all veggies together in a pot or saucepan with a little bit of water and let cook until veggies are tender.
Step 2
Once tender, add veggies to blender and pulse. Add cream and then milk until the blender can continually blend without needing to be shaken.
Step 3
Set puree aside and rinse saucepan. Add chopped bacon to saucepan and cook until crisp. Drain grease.
Step 4
Add veggie puree to saucepan over medium heat. Once hot, add cream cheese and stir to melt. Slowly add shredded Cheddar, making sure to stir well between additions.
Step 5
Add desired seasonings, but don't skimp. Mustard powder, garlic, and paprika are must-haves for this as it helps mellow the veggie flavor and make it taste more cheesy.
Step 6
Cook pasta to preference/box instructions. Drain pasta, add back to pot, add sauce, and mix well.
