These tasty hearty meat and spinach filled dumplings will warm you up on the coldest of days ! These can be made completely vegetarian also by filling with spinach and cheese

Step 1
In a large bowl add the flour oil salt and water then with your hands and bring it to a dough form . Knead for a few minutes then wrap in plastic wrap and put it in the fridge for 30 minutes

Blanch spinach in hot water then drain all the liquid off and roughly chop and set aside

Add 2 tbsp of milk to pieces of stale bread or baguette or a bread roll and let it sit to soak

Add ground beef to a large bowl with the spinach soggy bread eggs diced onion chopped parsley and chives salt and pepper and mix with your hands to combine fully

Step 5
Roll out the dough until it’s very thin then cut into large squares approx 20 . Add a heaped tablespoon of the filling to the centre then brush the corners with either water or egg yolk fold over and pinch closed with your hands
Step 6
Bring your favorite broth to a boil beef or vegetable or chicken then reduce to a simmer add in the Maultaschen and let them cook for 10-12 minutes . Don’t have them on boil as the movement may force the dumplings to open and the filling will come out ! Let them simmer very gently then serve with the broth and some extra chives . Enjoy
