Instructions

Step 1
Slice up the mushrooms and finely chop the onion.
Step 2
In a heavy-bottomed pan melt the butter.
Step 3
Add in the onions and cook until they are soft and translucent.
Step 4
Add in the mushrooms and cook for another 5 minutes.
Step 5
Remove some of the mushrooms for garnish.
Step 6
Add in the dill, paprika and chilli powder and stir.
Step 7
Pour in the vegetable stock stir, reduce the heat cover with the lid and simmer for around 10 minutes.
Step 8
In a bowl mix the milk and cornflour until smooth.
Step 9
Pour the mixture into the pan and stir, cover and simmer for a further 10 minutes.
Step 10
Add in the cream, parsley lemon juice, salt and pepper to taste.
Step 11
Allow to simmer for another few minutes.
Step 12
To plate, ladle some of the soup into a bowl, garnish with some of the sautéed mushrooms and a sprinkle of chopped parsley.
Step 13
Lick your lips and enjoy.
