Step 1
Preheat oven to 350 F (180 C)
Step 2
Heat the olive oil in a flat bottom cast iron skillet or dutch oven and brown the meat on all sides


Step 3
Add the pommeau and chicken stock so that the meat is partially covered. Add the herbs. Bring the stock/Pommeau liquid to a simmer. Cover and put in the oven for 1 hr.


Step 4
Add the peeled and cored apple during the last 30 minutues of the cooking process.

Step 5
After approximately 1 hour, check pork for tenderness. Remove from oven. Reduce the cooking liquid. Taste and adjust seasoning as needed.
Step 6
Serve pork, apples with a side of your choice. Sauteed spinach, or braised/roasted Brussel sprouts pair well with this dish.
