Step 1
Oven 300. Season pork with salt and pepper. Heat oil in Dutch oven over med heat and brown pork on all sides, 6-8 min each side. Transfer pork to a plate and add the onion and shallots to the pot. Season with salt and saute until tender, about 15 min. Add the garlic and cook 3 min. Add cider and deglaze pot.
Step 2
Add the stock, thyme, and bay leaves and return pork to pot. Cover and braise until meat reaches 145, 1-1½ hrs.
Step 3
Transfer pork to a cutting board to rest. Heat pot on stove over med-high and reduce sauce by half, 10-15 min. Stir in the mustard and season to taste.
