Instructions
Step 1
1. Bake pumpkin in oven until soft (ca. 40 mins)
Step 2
2. Chop up feta into cubes and spinach into stripes
Step 3
3. Add raisins to couscous
Step 4
4. Boil water and pour over couscous and raisins until just covered, cover up and let sit for 5 mins
Step 5
5. Add feta, spinach, olive oil, lime juice and salt and pepper to taste
Step 6
6. Enjoy!
