Ingredients

1cauliflower
large, cut into flowerets
½ teaspoonsalt
3 cupswater
¼ cupbutter
or margarine, melted
1 tablespoonsugar
½ teaspoonsalt
½ teaspoonpepper
1 cupbuttery cracker crumbs
round, or substitute crispy breadcrumbs
1 cupshredded cheddar cheese
½ cupshredded cheddar cheese
1sweet onion
medium, chopped
½ cupgreen bell pepper
chopped
0.5can roasted tomatoes
both puréed together in food processor
0.5can stewed tomatoes
both puréed together in food processor
Instructions
Step 1
Combine first 3 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, and cook 5 minutes or until tender; drain. Set aside.
Step 2
Combine butter and next 4 ingredients in a large bowl.
Step 3
Stir in cauliflower, 1 cup cheese, onion, bell pepper, and tomatoes.
Step 4
Spoon into lightly greased baking dish.
Step 5
Bake at 350 degrees for 20 to 25 minutes.
Step 6
Sprinkle with remaining 1/2 cup cheddar cheese, and bake 5 additional minutes.
