Step 1
Boil sliced potatoes until soft and drain. In the meantime heat oven to 220 degrees, fry onions and heat cream (you can add milk to make it less creamy if desired)
Add a layer of sliced potatoes, fried onions and cheddar cheese in a prepared Pyrex dish (buttered). Sprinkle with Maldon salt and black pepper and continue layering as above. Leave room for warmed cream. Cover potatoes with cream and another layer of cheese. Cover with parchment paper and tin foil and heat in oven x 45 mins remove cover and allow to brown and enjoy
