Instructions
Step 1
Mix chicken with 2 tbsp olive oil, herbs, salt, and pepper and make sure it's completely coated
Step 2
Heat the remaining oil in an oven safe skillet. Place the chicken skin-side down and cook 5-7 minutes until skin is browned.
Step 3
Flip the chicken and continue cooking another 5 minutes. Remove chicken from the pan.
Step 4
Add the shallots to the pan. Cook for about 10 minutes until starting to brown and soften.
Step 5
Add in white wine and scrape everything that's stuck. Stir in the mustard, then add in broth and couscous.
Step 6
Add the chicken thighs back in, cover with foil and bake at 350 for 30 minutes. Remove foil and cook for another 10-15 minutes until chicken fully cooked.
