Cous cous - Chicken breast, onion and chickpeas

It is one of the most versatile ingredients you can have in your kitchen. It goes well with meat or vegetables, you can eat it warm or cold and everybody loves it. This version is with chicken breast, onions and chickpeas.

Step 1
Put a pot on the stove with the water. Usually the water is twice the weight of the cous cous but adjust the quantity according to what is written in the cous cous box. Heat up the stove and once the water starts boiling switch it off and put all the spices in the water. Mix it with a spoon for few seconds and then add the cous cous too. Cover with a lid and shake the pot horizontally for a minutes. Let it rest now for 15 minutes.
Repeat the procedure that has been done before the cous cous preparation and shell it gently with a fork, layer by layer.

Step 2
When the cous cous is cold, put it into a bow with some olive oil. With a fork shell the cous cous for a couple of minutes.

Slice the chicken breast in pieces as well as the onions, you can make them as big as you like.

If you are using canned chickpeas it is not necessary to cook them in advanced. Just put them into a strainer and wash under fresh water.
In case you are using dried chickpeas consider to prepeare them a day before living them in fresh water for at least 12 hours and after that boilf for two hours.

Warm up a pan and when the butter is melted put the onions in it. Stew the onions until the get translucent and then add the chicken breast.
It depends on the slices or cubes you made but approximately 10 minutes should be enough to get the chicken ready.
Remove the pan from the heat and add the chickpeas and mix for a minute.

Now you can mix the cous cous with the chicken, chickpea and onions all together with the addition of some lemon juice. Mix and serve the dish hot or cold, just do it as you prefer. You can add some fresh parsley or coriander to add some color.
