Instructions

Step 1
Mix garlic, ginger, turmeric, onion powder, thyme, rosemary, black pepper and 1 seasoning cube together and rub on the washed lamp chops
Step 2
Allow to sit for 15 - 20 mins. Preheat oven to 400 degrees Fahrenheit
Step 3
Add 1 tablespoon of olive oil to a heated pan/cooking pot and add the seasoned lamp chops.
Step 4
Fry both sides till lightly brown then add the diced tomatoes, diced onions and tomato paste and cook for about 8 mins on medium heat
Step 5
Add chicken broth and mixed veggies to the pan and allow to cook for 3 mins. Adjust the season at this point by adding 2nd seasoning cube and 1/4 teaspoon of salt. Salt is optional
Step 6
Remove the lamb chops and set in the oven for 30 mins
Step 7
Add the couscous to the veggies, tomatoes and onions in the pot, as in step 5. Add chicken broth or water as needed but not too much that the broth covers the couscous. The broth is to make sure the couscous doesn’t burn
Step 8
Cover the pot with a paper towel and cook for 5 mins
Step 9
Take off stove top and set aside for 5 mins. After which it will be ready to serve with the lamb chops
