Instructions

Step 1
Preheat oven to 350 F
Step 2
Mix flour, sugar, spices, baking powder, baking soda, and salt in a large bowl. Add eggs, pumpkin, vanilla, oil, and optional raisins or nuts if using them. If using add-ins (nuts or raisins) dredge in a little flour first.
Step 3
Mix well with electric mixer. Grease or flour 2 loaf pans, fill with mixture and bake for 1 hour.
Step 4
Loaves freeze really well for up to six months!
