Ingredients
4 servings
1 tablespoonolive oil
1onion
chopped
2cloves garlic
minced
28 ouncescan diced tomatoes with basil
1 cupplant-based milk
unsweetened
½ cupnutritional yeast
¼ cuppasta water
cooked
½ teaspoondried basil
salt
to taste
pepper
to taste
12 ouncespasta
penne, fusilli, or rotini work well
fresh basil leaves
for garnish, optional
Instructions
Step 1
Cook pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
Step 2
While pasta cooks, heat oil in a large pan over medium heat. Add onion and garlic, cook for 3-4 minutes, until softened.
Step 3
Add diced tomatoes with basil, plant-based milk, nutritional yeast, pasta water, dried basil, salt, and pepper. Bring to a simmer and cook for 10 minutes.
Step 4
Blend sauce until smooth, using an immersion blender or food processor.
Step 5
Toss cooked pasta with sauce and garnish with fresh basil, if desired.
