Instructions
Step 1
Peal and mince or grate garlic.
Trim green beans; cut crosswise into 2 inch pieces.
Trim and slice scallions, separating whites from greens.



Step 2
Melt 1 tbsp butter in a small pot over medium high heat.
Add 1/2 the ginger, cook, stirring about 1 minute.
Stir in rice, 3/4 cup water, and a big pinch of salt.
Bring to a boil then cover and reduce to a low simmer.
Cook until rice is tender, 15-18 minutes.
Keep covered off heat until ready to serve.




Step 3
While rice cooks, put green beans and a splash of water in a microwave safe bowl. Cover with plastic wrap or lid and microwave for 2 minutes, then drain.

Step 4
Heat a large skillet over medium high heat with a drizzle of oil. Add pork and season with salt and pepper. Cook, breaking up meat into pieces, until browned, 4-6 minutes.



Step 5
Stir green beans, scallion whites, remaining ginger, and 1 tsp sugar into skillet with pork. Cook, scraping up any browned bits from bottom of skillet, for 1-2 minutes.



Step 6
Stir in szechuan paste, sweet soy glaze, and 1/4 cup water. Cook, stirring until everything is coated for 1-2 minutes.
Turn off heat and add salt and pepper as needed.





Step 7
Fluff rice with a fork and season with salt and pepper.
Divide rice and stir fry between 2 bowls. Top with scallion greens and peanuts.
