Instructions
Step 1
Combine eggs and milk in a medium bowl
Step 2
Sift flour and salt together in an oversized measuring cup
Step 3
Slowly combine egg mixture into flour mixture
Step 4
Put batter in fridge for at least 30 minutes
Step 5
When ready to bake, preheat oven to 450°
Step 6
Fill each muffin tin with 1 tsp oil or drippings and put into oven to heat up
Step 7
Once oil is heated and probably smoking, remove from oven and quickly fill muffin tins 1/3 full and put back in oven
Step 8
Bake for 30 minutes or longer
