ATK Pan-Seared Pork Tenderloin with Scallion Relish

Instructions

Step 1
Preheat oven to 275 F. Spray a rack with vegetable spray, and lay in a rimmed baking pan.
Step 2
Pound the tenderloins to flatten them to 1 inch thickness. Cut each in half to make four steaks. Coat each steak with 1/2 tsp salt and 1/8 tsp freshly ground pepper. Place on prepared baking pan in the oven, and cook to an internal temperature of 137-140 F, about 25-35 min.
Step 3
To make the scallion relish: Combine the whites of 6 scallions, 2 tsp finely grated ginger, 1/2 tsp lime zest, 1/2 tsp white pepper. Heat 1/4 c vegetable oil over medium heat until shimmering, and pour over the scallion mixture, stirring to wilt the scallions and bloom the aromas. Set aside for 15 minutes.
Step 4
Remove the pork and check that the temperature is 137-140 F. Pat very dry with paper towels, and let sit for 10 minutes in paper towels.
Step 5
To the scallion relish, add the greens of 6 scallions, 2 tsp soy sauce, and 2 tsp fresh lime juice. Stir to combine. Let sit for 15 minutes.
Step 6
Heat 2 tbsp vegetable oil in a skillet over medium-high heat until it starts to smoke. Making sure the pork is patted very dry. Turn the heat to very high, and brown the pork to a beautiful brown crust, about 1 minute each side. Remove to a carving board, allow to rest 5 minutes.
Step 7
Slice against the grain to make 3/4-inch thick slices. Arrange on a serving platter and dress with the scallion relish.
