Slow Cooker Turkey Chili Recipe

Ingredients
8 servings
1 Tbspextra-virgin olive oil
1red onion
finely chopped
1green Bell Pepper
chopped
1.5 lbground turkey
Kosher salt
black pepper
Freshly ground
2 clovesgarlic
minced
2 Tbsptomato paste
1 x 28 ozcan chopped tomatoes
1 x 15 ozcan black beans
rinsed and drained
1 x 15 ozcan kidney beans
rinsed and drained
1 ½ cuplow-sodium chicken broth
2 tspchili powder
1 tspground cumin
1 tspdried oregano
Instructions
Step 1
1. In a large skillet over medium-high heat, heat oil. Add onion and pepper and cook until beginning to soften, about 4 minutes.
Step 2
2. Add ground turkey and cook, stirring occasionally, until turkey is golden (it doesn't have to be completely cooked through at this point).
Step 3
3. Season with salt and pepper, then stir in garlic and tomato paste and cook until fragrant, about 2 minutes. Transfer mixture to a slow cooker.
Step 4
4. To the slow cooker, add tomatoes, black beans, kidney beans, chicken broth, chili powder, cumin, and oregano.
Step 5
5. Cook on high for 4 hours, until chili has thickened. Check for seasoning and season with salt and pepper to taste.
Step 6
6. Garnish with cheese and green onion, if desired.
