Instructions

Step 1
1) Preheat oven at 375 degrees

2) Entwine the beef starting around the sides and then top and bottom in a crossed way securing the ends tight.

3) Seasons the beef with the first listed ingredients but not the flour. Marinate for 10 minutes.

4) Preheat Dutch oven in medium heat

5) Put flour in a shallow pan for dredging.
Step 6
6) Dredge beef on the flour. Shake the excess flour.
Step 7
7 ) Add oil to the Dutch oven.
Step 8
8) Sear the beef all sides achieving a golden brown color. Around 2 minutes per side. Control the heat temperature and remove all burnt flour, by wiping off the bottom of the pan. Set beef aside.

9)Add more oil to the Dutch oven pan if need it, around 2 tablespoons.
Step 10
10) Sauté carrots for about 3 minutes.

11) Add onion and garlic until translucent.
Step 12
12) Add tomato paste and stir until caramelized.

13) Add whole bottle of wine, beef base, and water.
Step 14
14) Stir, bring beef to the Dutch oven, boil and simmer for about 5 minutes.

15) Cover Dutch oven pot with lid and aluminum foil.
Step 16
16) Cook in oven for about 1 1/2 hours or until beef is tender.
Step 17
17) Slice beef and serve it with the sauce.
