Peppermint mocha pancakes
These pancakes are simple, quick and quite low in calories considering the amount. They are fluffy and packed with flavours, perfect for holiday.

Ingredients

1egg
¼ cupplant milk
2 Tbspsweetener
3 Tbspcacao powder
2 tspground coffee
you can add 1 more tsp if you want your pancakes to have more coffee flavour
1 tspbaking powder
¼ cupflour
+ 1 tbsp

Instructions
Step 1
Make the sauce by melting the chocolate with your milk of choice, divide the mixture by 2 and add some natural food coloring to one (I used acai berries powder)
Step 2
Mix the dry ingredients together then set aside
Step 3
If you want your pancakes to be extra fluffy beat the eggwhites with salt then add egg yolks and milk
Step 4
Mix the dry ingredients with the wet until just combined
Step 5
Heat up some oil on a pan so the pancakes won't stick to it (I used coconut oil, just brushed some on my pan's surface)
Step 6
Cook your pancakes and flip them once you start to see air bubbles on them
Step 7
Plate them however you want, pour over the sauces, sprinkle with additional crushed candy canes and enjoy!
