Instructions
Step 1
Preheat oven to 425 degrees.
Step 2
In tray/casserole dish, combine diced peppers, mushrooms, and 2 tsp olive oil. Top vegetables with ground beef, breaking up meat into smaller pieces.
Bake uncovered in hot oven until beef starts to brown, 15-20 minutes.




Step 3
Carefully remove tray from oven and drain excess liquid. Add tomato sauce, chimichurri seasoning, and 1/4 tsp salt. Stir to combine, breaking up any large pieces of ground beef. Spread into an even layer.
Top evenly with pepperoni and cheese.






Step 4
Bake again uncovered in hot oven until cheese has browned, 12-15 minutes.
