3 lbboneless skinless chicken thighs
1can chipotle peppers in adobo sauce
4roma tomatoes
⅓ cred onion
⅓ ccilantro
0.5lemon
1lime
1 tspsalt
½ Tbspjalapeno
for corn salsa instead of tomatoes, add white corn and cooked poblano peppers

Instructions
Step 1
Cut off excess fat of chicken thighs. Rinse in vinegar and water.
Step 2
Blend up can of chipotle peppers and adobo sauce. Place in bag with chicken and let marinate at least 3 hours or overnight.
Step 3
Dice tomatoes, red onion, cilantro, and jalapeno. Mix together with lemon, lime, and salt.
Step 4
Combine ingredients for guacamole
Step 5
Prepare rice with water, salt, canola oil, and bay leaf. Add cilantro, lemon, and lime when rice is done cooking.
Step 6
Pan fry or grill chicken
