Halloumi and lentil tray bake

Simple traybake, loved by many clients. Packed with flavour, fibre and creamy halloumi. Leftovers for lunch! For complete ease, you could use a pre-prepped pack of Mediterranean veggies. It's delicious and so simple!

Step 1
Preheat the oven to 185 C
Step 2
Place the vegetables into a large baking dish, drizzle with the olive oil and balsamic and season. Cook in the oven for 15 mins.
Step 3
Meanwhile drain the lentils and mix with the olives, cayenne, paprika and puree.
Step 4
Slice the halloumi into 8 slices - 4 per person
Step 5
After 15 minutes, take the oven dish out and top the veg with the lentil mix, add the tomatoes, stir well and then place the halloumi slices on top
Step 6
Place back in the oven for 12 minutes. Take out and check if the halloumi is browning nicely - if it needs a little longer pop back in for 3 minutes more. Divide between two plates.
