Step 1
You'll need a large ceramic oven dish. Put the oven on a 180C.

Step 2
Half your tomatoes & mix them in a bowl with salt, pepper & a good shake of balsamic to gently macerate - set aside. Place the peppers, courgette & red onion chunks into the oven dish. Pour over olive oil & a good amount of salt & cracked black pepper, mix together well & roast for 10 minutes in the oven.
Step 3
Roll your asparagus spears in a little olive oil & seasoning to coat the spears. Drizzle the cheese slices with a little olive oil & shake some oregano over them.
Step 4
After 10 mins, take the dish out of the oven, give it a good stir & put in the macerated tomatoes. Pop it back in the oven for another 10 minutes.
Step 5
After 10 mins, take the dish out. Place the herbed halloumi slices on top & the asparagus spears over them. Shake in a touch more balsamic & sprinkle in the chilli flakes. Pop back in the oven to bake for a further 12 minutes. Serve up.
