Instructions

Step 1
Place a few tablespoons of enchilada sauce on bottom of 4 cup casserole dish. Add tortilla and top with peppers, half of chicken and shredded cheese. Add second tortilla and top with more sauce, rest of chicken, and corn. Top with last tortilla and add queso, scallion and remaining enchilada sauce. Bake at 400 degrees for 25-30 minutes. Cool slightly.
