Step 1
Preheat oven to 375 F. Combine chicken, salsa, cheese and sour cream until creamy pink color. Add salt and pepper to taste.
Step 2
Place heaping spoonful in tortilla, tuck in sides and roll up. Place in baking dish. Repeat until all chicken used up. Pour enchilada sauce to cover enchiladas and sprinkle with cheese. Bake 25-30 minutes or until it begins to brown slightly on top. Serve with sour cream!
